Golden Oyster Mushroom Shawarma

When you have a bountiful Golden Oyster Mushroom forage like we did the other day, you dine on them for days on end! For this meal, we decided to go with a Middle Eastern flare! So, we built a spice blend with some cumin and coriander seeds that we ground in our mortar and pestle, and we added some ground turmeric, paprika, and a little salt…and we had our seasoning for the mushrooms! From there, we sauteed the mushrooms with the seasoning and served on a warm whole wheat pita with a garlic yogurt sauce, spinach, arugula, tomatoes, and onions! This one turned out to be a huge winner in my house!

Ingredients:

  • Golden Oyster Mushrooms
  • Pita
  • Lettuce or Spinach
  • Tomato
  • Onion
  • Coriander Seed
  • Cumin Seed
  • Paprika
  • Turmeric
  • Salt
  • Tahini or Garlic Paste or (less traditionally, but still deliciously) Tzatziki

Method:

  • Rinse your mushrooms to remove any debris. Then, pat them dry and slice them.
  • Crush your cumin and coriander seeds in a mortar and pestle or a spice grinder.
  • Heat some olive oil in a frying pan. Then, add your mushrooms. Pour your ground cumin and coriander along with your paprika, turmeric, and a little salt over your mushrooms, and stir to combine.
  • As your mushrooms cook, slice your spinach or lettuce, tomatoes, and onions.
  • Heat your pita in the microwave, and spread a layer of your sauce of choice in the middle.
  • Top the sauce with your spinach/lettuce, tomato, and onion.
  • When your mushrooms are soft, have lost their vibrant colour, and have shrunken down a bit, add them atop your other ingredients.
  • Plate, devour, and enjoy!
