BBQ Chicken (of the Woods) Cheesesteak

With leftovers from the Chicken of the Woods Haul that we used to make our Maple Buffalo Chicken (of the Woods) and Waffles, we decided to do a reimagined version of our original Chicken (of the Woods) Cheesesteak!

The original version was more of a classic take on Cheesesteaks…but this time, we had some Dinosaur BBQ Wango Tango Habanero Sauce…so we decided to sauce this sandwich up with some tangy spice! We started by sauteeing up some peppers and onions before adding our mushrooms to the pan and coating everything with a generous amount of BBQ sauce! In the end, the textures and the flavours played perfectly together to form a really great sandwich that would be perfect for watching some Autumn Sports (which is perfect since the mushroom is a fall season mushroom).

Time: 20 Minutes

Ingredients:

  • Hoagie Rolls
  • Chicken of the Woods Mushrooms
  • Onion
  • Bell Pepper…we used yellow, but green or red would work well too.
  • BBQ Sauce of your choice.
  • Sliced Cheddar Cheese

Method:

  • Slice your onions and peppers.
  • Heat a little oil or butter in a large pan, and add your onions and peppers. Sautee until they start to soften.
  • As your peppers and onions cook, rinse your chicken of the woods mushrooms to remove any debris. Then, slice your mushrooms into thin strips.
  • When your peppers and onions are ready, add your mushrooms to the pan, and cook for another 8-10 minutes, stirring occasionally.
  • Towards the end of your cooking time, add in your BBQ sauce, and stir to coat your ingredients.
  • Separate your ingredients into piles equaling the number of sandwiches you plan to make.
  • Add your cheese atop each pile, and add a splash or two of water to the pan to encourage even melting.
  • Prep your rolls as your cheese melts. Slice, open, and add a little BBQ sauce to each side.
  • When your cheese is evenly melted, scoop your mushroom piles into each hoagie roll.
  • Top with another drizzle of sauce.
  • Devour, and enjoy!
