Before you go further with this one, know that this is for intense mushroom lovers only! The way that we processed our Chicken of the Woods mushroom creates a very earthy and mushroom forward flavour profile, and it may not be for everyone.
That said, if you’re looking for a pretty unique way to prepare your chicken of the woods, and you love the mushroomy taste, these may be for you! The process is pretty simple, and you only need a few ingredients…and the mushrooms sort of magically retain their shape when you ball them! We opted to use BBQ sauce for ours, but you could also simmer them in whatever sauce you like after baking!
We served our mushroom balls with roasted carrots and brussels sprouts!

Time: 45 minutes
Ingredients:
- Chicken of the Woods Mushroom
- Arrowroot Powder
- Salt
- Garlic powder
- Black Pepper
- Sauce of your choice. We used a spicy BBQ sauce.
Method:
- Preheat your oven to 375 degrees F, and line a baking sheet with some foil. Give the foil a quick oil spray.
- Rinse your mushroom pieces to remove any debris.
- Cut your mushroom into smaller chunks, and place each piece in your food processor.
- Pulse until your mushroom is finely minced.
- Transfer your mushroom to a bowl, and add in your salt, garlic powder, black pepper, and a tablespoon or two of arrowroot powder. Stir to fully combine and incorporate all your ingredients.
- Form your mushroom into “meatballs,” and place on your foil.
- Bake for 10-12 minutes.
- Rotate the mushroom balls, and bake for another 8-10 minutes on the other side.
- If using BBQ sauce, brush it atop before putting the mushroom balls back in the oven.
- If planning to simmer your mushroom balls in a different sauce, just bake, and simmer after they finish cooking.
- Plate, devour, and enjoy!
