Roasted Garlic Feta Tarts

If you’ve been reading our recipes for a little while, you know how much we love garlic! We love to use it to build a robust flavour profile in a lot of dishes…but we normally use it as a complement. In this case, we decided to give garlic the star treatment as the main attraction!

To make it happen, we Roasted our Garlic first to break down the sugars and take the spiciness of garlic and bring out its robust, sweet, earthy notes. From there, we turned it into a paste and served it atop some puff pastry with Feta. The end result was a really delicious, yet simple dinner bursting with flavour and texture! And, this dish is completely customizable too, as you can add other toppings as you see fit. We think chopped black olives or sauteed spinach would go really well on these as an additional topping.

We served our tarts with a spinach side salad and some balsamic vinaigrette.

Time: 75 Minutes

Ingredients:

  • Puff Pastry
  • Garlic (1 head makes two tarts)
  • Olive Oil
  • Salt
  • Black Pepper
  • Thyme
  • Crumbled Feta

Method:

  • Preheat your oven to 350 degrees F.
  • Cut the top off your garlic head, and brush the top with a little olive oil. Then, sprinkle a little salt and pepper on your olive oil.
  • Wrap your garlic in foil, and roast for 35-40 minutes.
  • As your garlic cooks, set your puff pastry on the counter to thaw.
  • When your garlic finishes roasting, remove from the oven, and carefully open the foil to allow heat to escape.
  • When the garlic has cooled a little extract the cloves, and place them in a bowl. Sprinkle a little thyme over them, and mash into a paste.
  • By this point, your puff pastry should have thawed. Cut it into the size pieces you’ll want (smaller for bite sized appetizers, larger for an entree), and arrange on a baking sheet.
  • Spread your garlic paste over your puff pastry, and bake for around 15 minutes.
  • Sprinkle your feta over your garlic paste, and bake for another 15-20 minutes.
  • When your puff pastry is golden brown and has risen, remove your tarts from the oven.
  • Plate, devour, and enjoy!
