Chanterelle Tacos

Sadly, Chanterelle Season has concluded in our area for the year…but we are a few recipes behind in posting these days, so we get to relive our culinary experiences with these glorious orange wild mushrooms! Additionally, we had such a strong harvest this year because of all the rain that we Dehydrated some of our Mushrooms and have a stash and stowed away for later!

On to the recipe itself now! Given the flavour profile of chanterelles with their earthiness and subtle sweetness, we decided we wanted to feature them in a taco with complementary flavours. So, we started with a neutral bed of lettuce as our chief underlayment. Then, we opted to play up the earthy flavours with our cheese choice (a combination of Crumbled Goat Blue Cheese and Whipped Goat Cheese). Lastly, we picked candied pecans and dried cranberries to supplement the natural sweetness of the mushrooms and build some body to the texture profile. A quick chanterelle sauté later, and we were ready to assemble! The end result was a really funky and tasty taco, so if you have a bunch of chanterelles, we strongly suggest trying these.

Time: 30 Minutes

Ingredients:

  • Flour Tortillas
  • Chanterelles
  • Candied Pecans
  • Dried Cranberries
  • Lettuce
  • Cheese of your choice. We recommend Chèvre or Goat Blue Cheese.
    • We used a blend of Whipped Goat Cheese (Chèvre, Kosher Salt, and a splash of Milk)
    • We then topped ours with a crumbled Goat Blue Cheese

Method:

  • Cut the very bottoms off your chanterelles, and rinse your mushrooms to remove dirt and debris that comes with wild mushrooms. Cut any large mushrooms in half.
  • Melt some butter in a large pan, and when it’s hot, add your chanterelles. Sauté until your mushrooms soften and turn a deeper golden colour. Continue to cook until the liquid that sweats out evaporates.
  • As your chanterelles cook, arrange your tortillas on your plate(s), and add your lettuce.
  • Prep your choice of cheese (Crumble, Shred, or Whip [see instructions linked in ingredients list above for whipped goat cheese]).
  • When your chanterelles are fully cooked, arrange them atop your bed of lettuce.
  • Add your cheese, dried cranberries, and candied pecans to finish your tacos.
  • Plate, Devour, and Enjoy!
