Creamy Veggie and Turkey Meatball Soup

Last night, we got a blanket of ice that covered the entire landscape (and our cars…). So, we figured we’d post a super nutritious and hearty soup today since it is the perfect meal to cut through the cold! The funky thing about this soup is that the creaminess came entirely from boiled and pureed cauliflower and parsnips! This added oodles of nutrients in addition to the soup as well as a unique and delicious flavour!

From there, we continued to build! We knew from our Watertown Wedding Soup recipe that small meatballs make for an excellent soup protein, so we defrosted some ground turkey and whipped up a batch of seasoned meatballs. From there, we opted to use egg noodles and spinach to round out the soup! When all was said and done, we had a delicious and easy to make soup to warm our souls!

Time: 60 Minutes

Ingredients:

  • Cauliflower
  • Parsnip
  • 6-8 cups of Chicken Stock
  • Spinach
  • Egg Noodles
  • For your Meatballs:
    • Ground Turkey
    • Parsley
    • Garlic Powder
    • Black Pepper

Method:

  • Chop your cauliflower and parsnip into small pieces, and place them into a soup pot.
  • Pour your chicken stock over your veggies, cover, and bring to a simmer. Cook until your veggies are super soft.
  • As your cauliflower and parsnips cook, preheat your oven to 350 degrees F, and line a baking sheet with some nonstick foil.
  • Combine your ground turkey, parsley, black pepper, and garlic powder in a bowl, and mash it all together by hand to fully incorporate your seasonings.
  • Scoop small amounts of your turkey, and form them into meatballs.
  • Arrange on your baking sheet, and when all are made, bake for 9-10 minutes. Then, flip, and bake for another 8-9 minutes until they are fully cooked.
  • Bring another pot of water to a boil, and cook your egg noodles.
  • When your veggies are ready, puree in a blender or with an immersion blender (we used the immersion blender because it was so much easier!
  • Chop your spinach into ribbons, and add it to your soup. Simmer until they begin to wilt.
  • When your meatballs and egg noodles are done, add them to your soup as well. Stir to fully combine.
  • Plate, devour, and enjoy!
