We had quite an incredible Golden Oyster Mushroom forage the other day, so we’re going a little wild trying to use them all in creative and different ways! For this one, we opted to make Tacos and season them with some seasonings. Then, we arranged them with some classic taco toppings (lettuce, tomato, onion) and drizzled a creamy citrus avocado sauce over everything! The earthy/seafoody notes of these particular mushrooms paired really well from a flavour standpoint, and the textures worked out nicely too!

Ingredients:
- Golden Oyster Mushrooms
- Chili Powder
- Garlic Powder
- Salt
- 1 Avocado
- 1 Lime
- 4 Tablespoons of Heavy Cream
- Lettuce
- Tomato
- Onion
- Tortillas
Method:
- Rinse and slice your mushrooms.
- Heat some avocado oil in a frying pan, and add your mushrooms. Add your chili powder, garlic powder, and salt.
- Cut your avocado so you can remove the pit and peel it. Then, slice the avocado into quarters, and place it in your blender.
- Cut a lime in half, and squeeze one of the halves atop your avocados. Slice the other half into wedges as garnish.
- Add your heavy cream to your blender along with any additional chili powder. Then, puree.
- Scoop your avocado puree into a zip top bag, and set aside.
- Slice your lettuce, tomato, and onions.
- Place your tortillas on your plate, and arrange your lettuce, tomatoes, and onions on top.
- Once your mushrooms are cooked, add them to your tacos.
- Cut a little corner off the bottom of your bag with the avocado puree, and squeeze the puree through that hole onto your tacos for dramatic effect.
- Plate (with your lime wedges), Devour, and enjoy!
