Refried Bean Taco Salad

Some nights, you just want a deluxe salad. Some nights, you want Mexican flavours. When you have those nights at the same time, this is what you get! Essentially, this is a large salad topped with a bean burrito filling of sorts that we turned into patties and baked, and then finished off with an avocado salsa ranch dressing! As with any salad, you can play with ingredients that you want…try some green or red bell peppers for some additional crunch and different flavours…so have fun with it!

Time: 35 Minutes

Ingredients:

  • For your Salad:
    • Lettuce
    • Tomato
    • Black Olives
    • Red Onion
    • Cheddar Cheese
  • For your Fritters (Makes 4)
    • 1 Can of Refried Beans
    • 1/2 Avocado
    • Lime Zest
    • Red Onion
    • Bread Crumbs
  • For your Dressing
    • Ranch Dressing
    • Lime Zest
    • 1/2 Avocado
    • Salsa

Method:

  • Start by prepping your fritters:
    • Preheat your oven to 350 degrees F, line a baking sheet with some foil, and give it an oil spray (you can also deep fry if you prefer).
    • Empty your can of beans into a large bowl
    • Dice your avocado and onion, and add it to your beans
    • Zest in some lime with a microplane grater.
    • Mash with a fork to fully combine.
    • Add your bread crumbs, and mix to combine.
    • Form your bean mush into patties, arrange on your baking sheet, and place in the oven for about 20 minutes.
  • Turn your attention to your dressing:
    • Peel and slice your avocado, and place it in a Ninja/Blender.
    • Pour in some Salsa, and zest in some lime.
    • Puree.
    • Pour your puree into a bowl, and add some ranch dressing.
    • Stir to fully combine.
  • Assemble your salad:
    • Combine all of your salad ingredients in a large bowl.
    • When your fritters are done, place them atop your salad.
    • Top with your dressing.
  • Plate, Devour, and Enjoy!
