Buffalo Whipped Ricotta

If you read our blog regularly, you know that we watch a lot of football, and Super Bowl Sunday is thus generally a pretty special day for us. Well, not so much this year, as it was hard for us to care about the matchup itself. Instead, I just kept hearing that familiar refrain in my head…”GO BILLS!” So, I put on my “Just One Before I Die” t-shirt and made some Buffalo inspired Football Food! To make it happen, we decided to go with a spicy whipped ricotta, into which we dipped toast and celery sticks.

We enjoyed this as our entree, but it would also be a great dip for an appetizer or just as a gameday snack! Oh, and it takes very little time to make!

Time: 15 Minutes

Ingredients:

  • 15 ounces Whole Milk Ricotta
  • 1.5 Tablespoons Buffalo Sauce
  • Cayenne Powder to taste (given the ratio of Ricotta to Buffalo Sauce, you’ll need Cayenne)
  • Dipping Ingredients of your choice. A few good options are:
    • Artisan Italian Bread (toasted)
    • Tortilla Chips
    • Celery
    • Cauliflower Florets
    • Sliced Red Bell Pepper

Method:

  • Scoop your ricotta into the bowl of your stand mixer.
  • Sprinkle on a copious amount of cayenne powder.
  • Pour in your Buffalo Sauce.
  • Use the whisk attachment to whip your ingredients together.
  • As your ricotta is whipping, prep your dipping ingredients.
  • Plate, devour, and enjoy!
