We made this dish for dinner a few months ago, and it was really tasty and different…but we procrastinated on posting the recipe because we just couldn’t figure out exactly what to name it. This name is the best we’re going to come up with, so it’s time to share the entree with the world.
At its heart, it’s like a stir fry, but with very different flavours and ingredients…chief among which is the inclusion of cheese! We also relied on balsamic vinegar instead of a more traditional soy sauce based motif. Lastly, we served our stir fry over couscous instead of rice.
We think you’ll enjoy this (if you like the ingredients), and it’s a fun, easy dish to make with a little whimsy and a ton of vegetables.

Time: 45 Minutes
Ingredients:
- Ground Chicken or Turkey
- Onion
- Eggplant
- Zucchini
- Swiss Chard or Spinach
- Balsamic Vinegar
- Salt
- Pepper
- Dill
- Crumbled Feta
Method:
- Dice your onion. If using Swiss Chard, remove the stems from the leaves, and dice the stems as well.
- Heat some olive oil in a pan, and add your diced onion and chard stems (if using).
- As your onion cooks, peel and dice your eggplant, and dice your zucchini. Then, add them to the pan. Pour in a little Balsamic Vinegar, and let your veggies cook down.
- Once your eggplant and zucchini have softened and begun to shrunk a bit, add your ground meat, and use a spatula to break it up into little chunks.
- Add your salt, pepper, and dill, and continue to sauté until your ground meat releases its liquids into the pan.
- Add your leafy greens to the pan, and allow them to cook down while everything else finishes. Stir it all together, and add any last balsamic vinegar as you like.
- Plate, top with crumbled feta, devour, and enjoy!
