Yesterday was Swiss National Day, so we decided to make a Swiss inspired meal for dinner…with our own experimental flare, of course. So, we decided to make a vegetarian Schnitzel! We opted to use firm Tofu because it is best suited to hold up to this cooking method without crumbling. So, we picked up a pack of firm tofu, grabbed some raclette, and we got to work! A few slices, coatings, fryings, and a light broiling later, and we had this really tasty and funky meal!
We served our schnitzel atop Zucchini Rösti. But we think this would also go really well with a classic potato Rösti alongside some steamed veggies!

Time: 45 Minutes
Ingredients:
- 1 Block of Firm Tofu
- Salt
- 1 Tablespoon All Purpose Flour
- 1 Egg
- Bread Crumbs (unseasoned)
- Raclette
- Paprika
- Black Pepper
- Optional: Scallion Onions
Method:
- Drain the water from your tofu, and remove it from the pack.
- Slice into quarters longways so that you end up with four thin sheets of tofu.
- Arrange them on an absorbant kitchen towel, and carefully wrap them to remove excess liquids. Allow to sit for 5-10 minutes.
- As your tofu sits, grab three bowls for breading.
- In the first, add your flour and a little salt.
- Crack and beat an egg in the second.
- Add your bread crumbs to the third.
- When your tofu is ready, unwrap it, and work one sheet at a time. Start by coating with your flour/salt. Then, cover with your egg. Then, toss lightly in your bread crumbs to coat. Set aside, and work on the next piece until all your tofu is breaded.
- Heat some oil in a large pan (we used cast iron), and when it’s hot, carefully add your tofu. Fry on the first side until crispy and golden brown. Then, flip, and cook the other side.
- As your tofu fries, slice your scallion (if using) into ribbons, and place a little foil on a broiling pan.
- When your tofu is done frying, remove and place on a paper towel to remove any excess oil.
- Transfer your schnitzel pieces to your broiling pan, and top each with scallions (if using).
- Arrange your raclette on top of each piece, and sprinkle your paprika and black pepper on top of the cheese.
- Broil to melt.
- Plate, devour, and enjoy!
