We are a little late posting this one since Ramp season is in late April/early May where we are. But, we still wanted to share this one so you can be ready for next Ramp Season (Here are more Ramp Recipes if you have an abundant haul)…or you can use other greens (like spinach) to make it outside of Ramp Season.
In the end, the ramps added a little bit of sweet onioniness to the rösti…and they added a little bit of lightness to the texture as well. They turned out to be a great addition! From there, we served them with a Chicken Schnitzel topped with an onion marmalade to complete the meal! That said, this side dish would also pair really nicely with one of our various Geschnetzeltes Recipes should you so desire!

Time: 40 Minutes
Ingredients:
- Russet Potatoes (although you can use frozen shredded potatoes for ease…that’s what we did)
- Ramps
- Salt
- Butter
Method:
- If using fresh potatoes, peel them, and boil them for a few minutes. Then, remove, and set aside in the fridge overnight. Then, shred them with a box grater or your food processor’s shredding plate when ready to start cooking.
- If using frozen shredded potatoes, place them in a bowl, and let them thaw on the countertop.
- Chop your ramps (or spinach), and sauté in a little butter until they cook down significantly.
- Scoop your ramps (or spinach) into your potatoes, and stir to combine. Sprinkle in your salt as well, and stir to fully incorporate it too.
- When you’re ready to cook, melt a tablespoon or two of butter into a large pan (we prefer cast iron). When it starts to bubble a little, add your potato/ramp mixture.
- Stir a little as it cooks, and then form into patties, and let sit in the pan to brown the bottoms.
- When the bottoms have turned brown and crispy, add more butter to the pan, and flip your patties.
- Cook the other side until it’s also crispy and brown.
- Plate, devour, and enjoy!
