Spicy Bacon Avocado Toast

The entire idea for this meal came from our various stops at the Lumberville General Store. We find ourselves stopping there at the midway point of a nice long bike ride in the summer…or when we get back to the car after a snow-shoeing trek along the Delaware Canal. Anyway, the restaurant serves an incredible avocado toast brunch, and that’s become a go-to order of ours. However, on our most recent trip, we also saw a cheddar jalapeno artisan bread. My wife ogled it, and I steeled my resolve to try to make that type of bread later that day!

After a quick trip to the grocery store for some jalapenos and cheese, I was ready to bake bread! The bread came out really well, and given the spicy/cheesiness of the loaf, we started to ponder the appropriate toppings for our toast. Rather than using a plain mashed avocado, we decided that Guacamole would pair exquisitely with the flavours in the bread. From there, we sauteed some bell peppers and onions, fried up some bacon, and finished everything off with cheese!

We served our toast as an entree along with a side salad. However, if you make the toasts a little smaller by cutting the bread slices in half, these would be a terrific finger food appetizer!

Time: 30 Minutes

Ingredients:

  • Cheddar Jalapeno Bread
  • Avocados (or premade guacamole)
  • Onion
  • Red Bell Pepper
  • Bacon
  • Shredded Cheddar
  • Optional for extra spice: Cayenne or Habanero Powder

Method:

  • Preheat your oven to 350 degrees F.
  • Peel and slice your onion thinly, and slice your pepper into thin strips as well.
  • Heat a little avocado oil in a pan, and sauté your pepper and onion until they begin to caramelize.
  • Begin to heat a pan large enough to cook your bacon.
  • Cut your bacon strips in half, and add them to the pan. Cook until the fat renders, and it turns golden brown on the first side, and then flip your bacon to cook the other side. When your bacon’s done, place it on a paper towel to absorb excess grease.
  • As your bacon cooks, slice your bread, and arrange it on a baking sheet.
  • Cut your avocado in half, and remove the pit and peel. Use a fork to mash the avocado in a bowl until smooth. Add your optional extra spice if using.
  • Spread your mashed avocado atop your bread slices.
  • Arrange your peppers and onions over your avocado.
  • Place your crispy bacon on top of your peppers and onions.
  • Top everything with your cheese, and transfer your toasts to the oven.
  • Bake for around 15 minutes.
  • Plate, devour, and enjoy!
