Peach and Kale Flatbread

We bought a peck of Peaches from a farm stand the other week, so we thought we’d play off the Georgia Flatbread we made a while back and make another pizza with peaches as an ingredient. This time though, we opted to puree them and use them as our sauce!

From there, we added some caramelized red onions, kale, and shredded gruyere to add some earthy, salty, and sweet notes to balance out the sweet tartness of the peach sauce. We opted to keep this as a vegetarian flatbread, but we think crumbled bacon would go really well on this too if you prefer to have some protein as a topping.

Time: 45 Minutes (more if making your crust from scratch)

Ingredients:

  • Pizza Crust or Dough….store bought or Make Your Own!
  • 2 Peaches
  • Red Onion
  • Kale
  • Gruyere
  • 1 Tbsp Corn Starch
  • 1 Tbsp Warm Water

Method:

  • Preheat your oven to 425 degrees F.
  • Cut your peaches to remove the pit, and then dice the fruit. Puree in a blender. Transfer to a saucepan, and bring to a low simmer.
  • Peel and dice your onion. Then, heat some olive oil in a pan, and sautee until they begin to caramelize.
  • While your onions and peaches cook, remove the stems from your kale, and cut the leaves into thin strips.
  • Grate or crumble your cheese.
  • Combine your corn starch with warm water, and stir to dissolve. Then, pour that into your peach pot, and allow to thicken.
  • Roll out your pizza dough on a sheet of parchment paper and then transfer the parchment paper onto your baking sheet or pizza stone.
  • Spread your peach sauce over your crust or dough.
  • Sprinkle your onion and kale evenly over the sauce.
  • Add your shredded/crumbled cheese over everything.
  • Bake for 20-25 minutes until your crust is crispy to your liking.
  • Plate, devour, and enjoy!
