This dish combines three things we greatly enjoy:
- Poutine
- Playing with classic food concepts to come up with something different
- Yellow Bean “French Fries”
So, we purchased some cheese curds, went out into our garden to harvest a solid haul of fresh yellow beans, and got to work! We started by roasting the beans and building a gravy with a veggie stock base and some herbs…and then we combined everything with our cheese curds for a simple, yet delicious meal (which would also work as a side dish if you prefer).

Time: 40 Minutes
Ingredients:
- Yellow Beans
- Black Pepper
- Cheese Curds
- 1.5 Tablespoons Butter
- 2 Tablespoons All Purpose Flour
- 1.5 Cups Vegetable Stock
- Dried Parsley
Method:
- Preheat your oven to 350 degrees F.
- Clean your yellow beans by removing the stems and giving them a quick rinse (and quick dry).
- Spread your beans on a foil lined baking sheet, and give them a quick oil spray. Then, sprinkle some black pepper atop.
- Bake for 25-30 minutes.
- As your fries bake, melt your butter in a small saucepan. When the butter’s melted, whisk in your flour, and let it start to bubble. Then, whisk in your stock, and add your parsley. Let simmer over low heat to thicken into your gravy.
- When your fries are ready, arrange them in your bowl, and place your cheese curds atop.
- Drizzle your gravy over everything.
- Devour, and enjoy!
