We typically pass a farm stand every Sunday, and we’ve been buying fresh organic kale and blueberries from them. Not coincidentally, we have also started a little tradition of Blueberry Kale Salads for Sunday lunches!
These salads are simple, customizable, nutritious, and delicious! As long as you have your kale and blueberries, the rest of the ingredients are all up to your imagination! For toppings, we like to use any combination of sweet onion, crispy fried onions, candied walnuts, candied pecans, pistachios, diced apples, or shredded carrots. Then, we like to use crumbled goat cheese or feta (depending on what texture and flavour we want). And then lastly, we alternate between champagne vinaigrette, sweet apple dressing, or balsamic vinaigrette. For this one, we went with a homemade balsamic vinaigrette with a blueberry infused balsamic vinegar. It’s hard to go wrong, no matter what combo you use…so have fun with it!

Time: 20 Minutes
Ingredients:
- A big bunch of Kale
- Blueberries
- Sweet Onion
- Crumbled Goat Cheese
- Candied Walnuts
- 1/4 Cup Olive Oil
- 1/4 Cup Balsamic or Champagne Vinegar
- 1 Tablespoon Sugar
- 1/2 Teaspoon Mustard Powder
Method:
- Rinse your kale. Then cut the leaves off the stems, and discard the stems.
- Slice your leaves into ribbons, and place into a large mixing bowl.
- “Massage” your kale to break down the tough cell structure a bit…it’ll take 3-5 minutes of massaging, but by the end, your kale will be softer, and it’ll be a deeper green.
- Rinse your blueberries, and add them to your kale bowl.
- Slice your onion thinly, and add it to the kale bowl as well.
- Make your dressing:
- Combine your oil and vinegar in a measuring cup.
- Add your sugar and mustard powder (which will keep your dressing from separating)
- Stir or whisk vigorously to combine. You could also put everything into a mason jar, put the lid on, and shake it to combine.
- Pour your dressing over your salad ingredients, and toss to combine.
- Scoop your salad into bowls, and add your other toppings and/or cheese.
- Plate, devour, and enjoy!
