We enjoy the very saucy eastern European noodle dish that is Stroganoff. In fact, whenever my son and I go backpacking with his troop, the scouts go wild for freeze dried Beef Stroganoff. So, every now and then, we make a non-freeze dried version…maybe it’s called a fresh version. For this iteration, we wanted to make a Fusion Food, so we blended flavours from Mexican cuisine with the Stroganoff concept!
We got the idea to borrow from Mexican flavours because Stroganoff (or Strogi as we call it) uses sour cream as a key ingredient. From there, we subtracted ingredients like mushrooms and added in hot peppers, corn, beans, and tomatoes…oh and some cumin seeds! Once everything was ready, we added some sliced avocado for touch, and it was time to eat! This dish was a huge winner, and my family asked me to make it again!

Time: 60 Minutes
Ingredients:
- Ground Meat of your choosing. We used Chicken.
- Black Beans (canned or already rehydrated)
- Onion
- Garlic
- Poblano Pepper
- Hot Peppers…We suggest fresh jalapeno peppers or chipotle chilies in adobo sauce
- Cumin Seeds
- Tomatoes
- Corn
- Chicken or Beef Stock (a cup or two)
- Sour Cream
- Egg Noodles
- Optional Garnish: Avocado
Method:
- Dice your onion, garlic, poblano, and hot peppers.
- Heat some oil in a large pot or Dutch Oven, and add your diced veggies and cumin seeds. Sautee until the peppers and onions start to soften.
- Bring a pot of water to a boil.
- As your peppers and onions cook dice your tomatoes. When your peppers and onions are ready, add your tomatoes, and let them cook down.
- As your tomatoes cook, open your can of beans, and rinse them well.
- When your tomatoes have started to lose their shape, add your ground meat to the Dutch Oven. Cook until it’s firm, and then use a spatula to break it up well.
- When your pot of water is boiling, cook your egg noodles.
- Add your beans and corn to your Dutch Oven. Stir to combine, and continue cooking until your meat is fully done.
- Pour your stock into your Dutch Oven. Bring to a low simmer.
- Add your sour cream to your Dutch Oven, and stir to fully incorporate.
- Drain your noodles, and add them to your pot.
- If using avocado as a garnish, slice it now.
- Plate, devour, and enjoy!
