Lemon Kale White Pizza

The other day felt like a pizza night. And we still had some ricotta left over from a Whipped Ricotta feast, so we thought we’d capitalize and go with a White Pizza! We also had some kale in the fridge and remembered back to when we made Lemon Parmesan Kale Chips…and we thought that blending those with the white pizza concept would work really well.

From there, we added some sliced tomatoes and red onions, and then we baked. The kale crisped up a little, and all of the flavours and textures played wonderfully together! We definitely suggest giving this vegetarian pizza/flatbread a try!

Time: 30 Minutes (More if making your own crust)

Ingredients:

  • Pizza Crust. Go with pre-made or Make Your Own.
  • Kale
  • Olive Oil
  • Lemon Juice
  • Tomato
  • Red Onion
  • Ricotta Cheese
  • Parmesan Cheese

Method:

  • Preheat your oven to 350 degrees F.
  • Cut the stems off your kale, and discard. Then, chop the remaining leaves, and put those in a mixing bowl.
  • Massage your kale for a few minutes to soften it. Then, add a little olive oil and lemon juice, and stir to combine.
  • Slice your red onion and tomato.
  • Arrange your pizza crust or dough on a pizza stone or baking sheet.
  • Spread your ricotta cheese thinly and evenly over your crust or dough.
  • Place your tomato and onion slices evenly across your pizza.
  • Spread your kale atop your tomato and onions.
  • Sprinkle your ricotta cheese over everything.
  • Bake for 20-25 minutes until your crust reaches your desired level of crispness.
  • Plate, devour, and enjoy!
