Double Garlic Pork Loin

On cold winter days where the snow (or sleet) is falling, sometimes, you just need a hearty comfort food. This meal fits the bill! at its core, it’s a Dutch Oven roasted pork loin with a lot of garlickiness. As it cooks, the aromas waft through the house and make you very hungry before it’s time to eat (which is the only drawback, as far as I’m concerned). Anyway, the pork comes out super tender, and the roasted garlic gravy drizzled atop adds some moisture and flavour depth back to the dish as well!

We served our pork with a Root Vegetable Mash, a broccoli casserole that my great aunt made, and Fried Goat Cheese Balls! However, this would also go very well served atop a bed of Roasted Garlic Mashed Potatoes or Sneaky Mashed Potatoes alongside steamed or roasted vegetables.

Time: 75 Minutes

Ingredients:

  • For your Meat:
    • Pork Loin. We used around 3.5 lbs.
    • Garlic Powder
    • Salt
    • Black Pepper
  • For your Gravy:
    • 5-6 Cloves Roasted Garlic
    • 1 Cup Vegetable or Chicken Stock
    • 1 Tablespoon Butter
    • 1 Tablespoon All Purpose Flour

Method:

  • Preheat your oven to 350 degrees F. As your oven is heating, start Roasting your Garlic.
  • Start to heat your Dutch Oven on your stove over medium heat.
  • Pat your pork loin dry with paper towels, and then give it a good sprinkling of salt, black pepper, and garlic powder.
  • When your Dutch oven is hot, add your pork, and sear it well on all sides.
  • Add the lid to your Dutch oven, and transfer everything to the oven. Bake for around 50-60 minutes until your pork reaches a minimum internal cooked temperature of 150 degrees F.
  • As your pork nears the end of its cooking time, turn your attention to your gravy.
    • Combine your stock and roasted garlic cloves in a blender, and puree.
    • Melt your butter in a saucepan, and then whisk in your flour. Let it sit and bubble together for a moment or two.
    • Whisk in your pureed liquid, and let simmer to thicken.
  • Once your meat reaches its finished cook temperature, remove from the oven, and transfer to a cutting board. Let sit for around 5 minutes.
  • Slice your pork to whatever your desired thickness is.
  • Plate, drizzle with your gravy, devour, and enjoy!
