Here’s another recipe from our Madeira trip! This one is our take on a traditional fish preparation. This particular method involves frying the fish and serving it alongside a pan fried banana along with a passion fruit sauce. I know…it sounds like there’s no way that it would be good. But, we ordered it from a restaurant in Ribeiro Frio, and it was INCREDIBLE. One of the top meals we had on our trip. So, when we found passion fruit at the grocery store, we figured we’d give it a try. Our version wasn’t quite the same, but it was still pretty tasty!

Time: 20 Minutes
Ingredients:
- Black Scabbard Fillet (Haddock may work as a suitable stand in)
- A Pinch of Salt
- 2-3 Passion Fruits
- 2 Tablespoons of Butter
- A few tablespoons of water or dry white wine depending on whether you want a little tang or not
- Optional, but highly suggested: a banana
Method:
- Pat your fish dry, and sprinkle a little salt atop.
- Cut your passion fruit in half, and scoop the insides out into a small pan. Add in 1 tablespoon of your butter as well. Heat over low heat to melt the butter.
- Add the other tablespoon of butter into a larger pan, and when it’s hot, add your fish. Cook for 4-5 minutes per side until your fish reaches a minimum internal cooked temperature of 145 degrees F.
- As your fish cooks, stir in some water or wine (we think water is better) to thin your sauce a little. If using a banana, add it to your sauce pan here as well.
- When your fish is ready, plate it, and drizzle your sauce atop. Devour, and enjoy!
