In our past two posts (Sesame Cod with Cauliflower Avocado Puree and Cauliflower Turmeric Paneer Curry), we featured Cashew Milk…and as we saw how those sauces turned out, we became emboldened to keep pressing and see what else we could make with it! One doesn’t normally think of Cashews in Italian Food…but maybe that should change now. We used cashews/cashew milk to turn our eggplants and tomatoes into a really creamy flavourful puree, which became a perfect sauce for pasta!
We then served our sauce under some Roasted Eggplant and Smoked Mozzarella Ravioli we bought from Spring Creek Farm. However, you can use any pasta/ravioli/tortellini you like. We would also suggest this sauce to pair with our Roasted Eggplant Stuffed Shells! And if you’re feeling super adventurous, you can try making your own pasta!

Time: 35 Minutes
Ingredients:
- Pasta of your Choice
- Eggplant
- Tomato
- Garlic
- Basil
- Cashew Milk (amount will vary based on how thick you like your sauce)
- Optional: Red Pepper Flakes
- Optional: Black Pepper
- Optional: Parmesan Cheese
Method:
- Begin to bring a pot of water to a boil, and add in a little olive oil and salt.
- Peel and dice your eggplant and garlic.
- Heat a little olive oil in a large pan, and add your eggplant and garlic along with your basil and red pepper flakes (if using).
- Dice your tomato, and add it to the pan as well. Sautee until your veggies start to lose their form.
- As your veggies cook, boil your pasta.
- When your veggies are ready, puree them in a blender with your cashew milk to form your sauce. The more cashew milk you use, the thinner your sauce will be. We suggest starting with a half cup and then adding more in as you see fit until your sauce reaches your desired consistency.
- When your pasta is ready, drain the water.
- From here, you have options! You can add your pasta and sauce together and stir to coat. You can also reheat your sauce and serve it under or atop your pasta!
- Plate, sprinkle your fresh black pepper and grated parmesan cheese atop, devour, and enjoy!
