Paneer Curry Poutine

We’ve been on a Poutine kick of late, and since we just learned that shredded Paneer is amazing (see Paneer Tikka MaPizza), we decided we needed an Indian/Canadian Fusion dish. To make it happen, we created a fresh sauce to take the place of gravy, and we used paneer as our cheese component. From there, we plated everything atop a bed of fries, and we were on our way!

We based our sauce loosely on a Korma, but this would also work with a Tikka Masala or a Butter Chicken sauce too. I suspect, it would also work with a Jalfrezi or Vindaloo style as well if you want some extra heat. Either make your own, or use some pre-made sauce for convenience. Also, if you’d like something a little funkier for your fries, give our Curried French Fries a shot!

Time: 60 Minutes

Ingredients:

  • Russet Potatoes (1.5-2 per serving) or frozen French fries
  • Garlic
  • Onion
  • Tomatoes
  • Raisins (Black or Golden)
  • Bay Leaves
  • Cumin Seeds
  • Caraway Seeds
  • Dried Chili
  • Ghee or Butter
  • Whole Milk Plain Yogurt
  • Paneer

Method:

  • Preheat your oven to 375 degrees F, and line a large baking sheet with foil.
  • If making your fries from scratch, begin by cutting your potatoes, and then tossing them in olive oil and arranging them on your baking sheet and sprinkling a little salt atop (or make Curried French Fries). Then, bake for around 45 minutes, flipping halfway to ensure even browning. If using frozen fries, cook them according to your packaging instructions..
  • Peel and dice your onion and garlic.
  • Heat some ghee or butter in a large pan, and add in a bay leaf, your dried chili, and your cumin and caraway seeds.
  • Add your onion and garlic, and stir in with your spices.
  • Dice your tomato, and add it along with your raisins to the pan, and cook until the tomatoes begin to break down and disintegrate.
  • When your tomatoes lose their form, remove the bay leaves from your pan, and then puree the rest of your ingredients in a blender. Then, scoop the puree back into your pan, and add some yogurt. Heat back up, and stir to combine.
  • Grate your paneer with a box grater or you food processor’s shredding plate.
  • When all of your ingredients are ready, it’s time to plate:
    • Arrange a layer of fries on your plate or in a bowl.
    • Sprinkle your shredded paneer over your fries.
    • Scoop your sauce atop everything.
  • Devour, and enjoy!
