Last year, we made a Buffalo Poutine for the Bills/Packers game since it seemed like the way to meld two local(ish) culinary aspects. We decided to go back to that well, but with a little different flavour profile for this dish! We know that Maple Syrup and Buffalo Sauce pair (surprisingly) well together from our Maple Buffalo Pumpkin Chili and our Maple Buffalo Pulled Turkey recipes, so we decided to add a maple infusion to our Buffalo Sauce for this smothered french fries dish!
The end result was a sweet and spicy gravy that coated our fries and our cheese…which of course had to involve cheese curds and crumbled blue cheese! We served this as a game-time snack, but it would also be a good hearty main dish if you pair it with something lighter like a helping of steamed broccoli or a side salad.

Time: 45-75 minutes (depending on whether you’re making your fries from scratch or using frozen)
Ingredients:
- Russet Potatoes (1.5-2/serving) or frozen French Fries
- 1 Cup of Chicken Stock
- 3-4 Oz Mild Buffalo Sauce
- 1-2 Tablespoons of Real Maple Syrup
- 1.5 Tablespoons of Corn Starch
- 1.5 Tablespoons of warm water
- Crumbled Blue Cheese
- Cheddar Cheese Curds
Method:
- Preheat your oven to 375 degrees F, and line a baking sheet with some foil.
- Either:
- Make your Wedge Fries (with salt instead of the seasonings noted in the linked recipe) by cutting your potatoes, tossing in oil, and baking until golden brown and flipping halfway through for even cooking.
- or Heat your frozen fries in the oven.
- Transfer your fries to an oven safe baking vessel, and top with your cheese curds. Then, send the fries and cheese back to the oven.
- Turn your attention to your Maple Buffalo Gravy:
- Pour your chicken stock into a saucepan, and bring to a good simmer.
- Whisk in your Buffalo Sauce and Maple Syrup, and let simmer for a few more moments.
- Mix your corn starch and warm water in a small cup, and stir to fully dissolve. Then, pour it into your saucepan.
- Let your gravy simmer and thicken.
- Remove your fries from the oven, and arrange in your serving vessels.
- Place your cheese curds and crumbled blue cheese atop your fries, and then pour your Maple Buffalo Gravy over everything.
- Devour, and Enjoy!
