Buffalo Chicken Savory Pie

Time for another Savory Pie…this time one that’s perfect for watching a sports game (Go Bills!). For this pie, we used classic Buffalo Wings ingredients like chicken, celery, Buffalo sauce, and blue cheese to do the heavy lifting, and then we added some shredded celery and onion to add body to the pie innards and make sure our pie crust was filled to the top. We then finished the pie off with crumbled smoked blue cheese, which added a really nice dimension to the flavour profile (and made our pie prettier than it would have otherwise been). The end result of this was a really tasty pie with a classic Buffalo Chicken taste and some extra flare. The other benefit we found is that you can prepare this ahead of time, so all you need to do is put it in the oven to finish…so you can watch your game rather than be in the kitchen cooking!

Time: 90 Minutes

Ingredients:

  • Pie Crust. Either use Frozen or Make Your Own!
  • 1/2 Cauliflower (Riced Cauliflower will work too, as we will be shredding the cauliflower)
  • 1 lb Ground Chicken
  • 1 Onion
  • 5 Stalks of Celery
  • Buffalo Sauce
  • Crumbled Blue Cheese
  • 2 Tablespoons All Purpose Flour

Method:

  • Dice your onion and celery. Then, heat some oil in a pan, and begin to sauté these veggies.
  • Grate your cauliflower using a box grater or your food processor’s shredding/grating plate. Then, add it to your pan as well, and stir to combine. Cook until the cauliflower begins to soften.
  • Add your ground chicken to the pan, and break it up with your spatula. Stir to combine, and cook to brown.
  • As your filling cooks, preheat your oven to 350 degrees F, and arrange your pie crust in a pie dish.
  • When your chicken has browned, and excess liquids have cooked off, sprinkle in your flour, and stir to combine. Let sit for a minute or two.
  • Pour in your Buffalo Sauce, and stir to combine and coat. Bring to a brief simmer to thicken.
  • When your sauce has thickened and coats your chicken and veggies, scoop it into your pie dough.
  • Bake for 40-45 minutes. When you have about 5 minutes left to go, sprinkle on your blue cheese, and finish in the oven to melt.
  • Plate, devour, and enjoy!
