Lobster Roll Tartines

We were looking for a special birthday dinner to make for our son’s big day, and this was what we came up with! We had some frozen Lobster Tails that we bought on crazy sale, and we stashed them away for a special occasion…so when his birthday came around on the calendar, it seemed perfect to defrost and use them!

From there, we decided to make Tartines with some classic Lobster flavours (brown butter, chives, and lemon). The end result was a crunchy, buttery, lobstery flavour and texture in each bite, and these turned into an instant hit. Although, they were later surpassed by my wife’s homemade lemon cake.

We served our Lobster Tartines with Kaleslaw. However, we think they would also go nicely with a steamed veggie medley (perhaps broccoli, cauliflower, and carrots), Garlic Snow Peas, a more classic tangy Coleslaw, or a side salad.

Time: 20 Minutes

Ingredients (Makes 6 tartines):

  • Fresh Italian Bread or Brioche
  • 4 Lobster Tails
  • 4 Tablespoons Butter
  • Chives
  • Lemon

Method:

  • Add two tablespoons of butter to a saucepan, and turn the heat to very low. Let the butter melt and brown as you continue cooking the rest of your components.
  • Melt a tablespoon of butter in the microwave. Slice your bread, and brush it with your melted butter.
  • Use a pair of kitchen shears to cut through the shells of your lobster tails. Then, extricate the lobster meat, and discard the shells. Dice the meat.
  • Melt a tablespoon of butter in a frying pan, and heat a griddle.
  • Arrange your bread (buttered side down) on the griddle to brown.
  • Place your lobster meat in your pan, and cook until it firms up.
  • As your lobster cooks, dice your chives, and slice your lemon.
  • When your bread is golden brown, flip it to heat the other side, and then plate it.
  • Arrange your cooked lobster meat atop your bread.
  • Sprinkle your chives atop your lobster.
  • Drizzle your brown butter over everything.
  • Plate (with your sliced lemon), devour, and enjoy!
