Gyro Burger

For this burger, we borrowed a page from a few past recipes and infused it with cheese! The concept worked really well for our Pizza Burgers and Creamy Horseradish Cheddar Infused Burgers, so we figured we’d go back to the well and infuse this one with feta! With the feta decision made, it only seemed natural to build some Greek flavours into the meal. So, we roasted some eggplant slices (although if you’re grilling your burgers, Grilled Eggplant Medallions would work perfectly), made some (rudimentary/speedy) Tzaziki, and went from there. That said, if you prefer, tomatoes, onions, lettuce/baby spinach, and hummus would also make for solid toppings.

We served our burgers with a field greens side salad. However, if you’re looking for a hot side to pair, we think Garlic Butter Shredded Eggplant or Sauteed Cucumbers would be nice options as well.
