Golden Oyster Mushroom Sandwiches

My wife and I took our dogs on a walk through some local woods the other day, and we had two goals in mind for the stroll. The first was to enjoy some time outside (as we are keen to do), and the second was to tire our foster pup out to set up a nice relaxing evening. Foraging was not on our minds at all…so when we found a veritable forest of Golden Oyster Mushrooms, we didn’t have anything we needed to harvest them (or as we like to call it “grocery shop”). So, we went back home, collected a step ladder, some paper bags, and our son…and we went back to the “mushroom aisle.” After harvesting, we started pondering meals to make with our bounty, and this is the first one we came up with.

We started by breading and frying our larger mushroom caps before placing them on a bun with some lettuce, tomato, onion, and a spicy aioli. The mushrooms thus had a really nice crunch on the outside and added their characteristic earthy taste to the whole meal. We served our burgers alongside some tater tots.

Time: 30 Minutes

Ingredients:

  • Golden Oyster Mushrooms
  • All Purpose Flour
  • Unseasoned Bread Crumbs
  • Egg(s)
  • Burger Buns
  • Burger toppings. We suggest Lettuce, Tomato, and Onion.
  • Mayonnaise
  • Hot Sauce of your choice

Method:

  • Rinse your mushrooms, and remove the stems so that your caps are as flat as possible.
  • Grab three large bowls, and scoop some flour in one, beat an egg or two in the next, and add your bread crumbs to the last.
  • Working one at a time, coat your mushroom caps with flour, egg, and then bread crumbs. Then, place on a plate.
  • Once all of your mushrooms are breaded, heat some oil in a large frying pan (we needed two pans to accommodate our mushrooms).
  • Once the oil is hot, carefully place your mushrooms into your pan(s) in a single layer.
  • Fry until the bottoms are golden brown and crispy. Then carefully flip, and cook the top side to the same degree.
  • As your mushrooms cook, combine a little mayonnaise with your favourite hot sauce (we used a roasted garlic habanero sauce), and stir to combine. Then, spread it onto your burger buns.
  • Slice your onion and tomato, and arrange these on your bun along with your lettuce.
  • When your mushrooms are done cooking, place them on your buns.
  • Plate, devour, and enjoy!
