Honey Rhubarb Whipped Ricotta

Rhubarb season is in full force, and one of our favourite challenges is to think beyond dessert and create Savory Rhubarb dishes! For this one, we decided to sauté some and serve it Whipped into Ricotta! This dish was so easy to make and absolutely luxurious to eat. The tartness of the rhubarb mixed really well with the sweetness of the honey and the silkiness of the ricotta to create a really nice spread to serve with a toasted Italian Bread, which provided crunchy dichotomy sure to delight!

Time: 35 Minutes

Ingredients (makes 3-4 servings):

  • 15 ounces Whole Milk Ricotta
  • 3 Stalks of Rhubarb
  • 1.5-2 Tablespoons Honey
  • A pinch of kosher salt
  • Ingredients to dip into your ricotta. We used a Semolina Baguette that we sliced, buttered, and toasted on a griddle.

Method:

  • Dice your rhubarb.
  • Heat a pan with a little butter, and add your rhubarb. Cook, stirring occasionally until your rhubarb loses its form and turns into a paste.
  • Combine your ricotta, honey, and rhubarb paste in your stand mixer, and add your salt.
  • Use your whisk attachment to whip everything together and fully combine.
  • Plate, devour, and enjoy!
