Broiled Cod Fish Tacos

Yesterday was the second iteration of Bills vs. Dolphins for the 2023 season, and it was for all the proverbial marbles. Winner takes the division. So, we decided to send some positive vibes to the Bills and cook up some fish for dinner in the hopes that they would do the same during the game and give our eyes a little dessert.

It’s with great joy that I’m here to share that Buffalo also cooked some fish, and they now get to host a playoff game! So, now, let’s get to the part of the night that we controlled…the tacos!

We began with cod fillets, and we seasoned and broiled them to build protein component. We then made some Guacamole to add some texture and richness to the flavour profile…and we finished with some shredded lettuce and diced red onion!

Time: 35 Minutes

Ingredients:

  • White Fish of your Choice. We went with Cod, and we used about 1/2 lb to make 3 tacos.
  • Chili Powder
  • Flour Tortillas
  • Jalapeno
  • Shredded Lettuce
  • Red Onion
  • Guacamole (or Make Your Own):
    • Avocados (Ripe…not hard and not squishy)
    • Tomato
    • Lime
    • Ground Cumin
    • Cilantro
    • Salt

Method:

  • Arrange some nonstick foil (or regular foil with a good oil spray) on a broiling pan.
  • Slice your fish into strips, and arrange on your broiling pan.
  • Sprinkle a good coating of chili powder over your fish, and let sit for a moment or two.
  • Slice your jalapeno, and sauté it in a little oil to brown.
  • Dice your onion, and set aside.
  • As your jalapeno cooks, broil your cod on the high setting until your fish is flaky (~10 minutes)
  • As your fish cooks, make your Guacamole:
    • Slice your avocados in half, and carefully remove the pits.
    • Cut each half in half, peel the skin off each wedge, and then dice your avocados. Place the diced avocado into a bowl.
    • Dice a tomato, and add it to your bowl as well.
    • Sprinkle on some ground cumin and dried or fresh cilantro as well as a pinch of salt.
    • Use a lemon zester to zest in some lime…or squirt in some lime juice if you prefer.
    • Use a fork to mash everything together until smooth.
  • Arrange your tortillas on your plate, and sprinkle your shredded lettuce on.
  • Arrange your broiled cod atop your lettuce
  • Spread your guacamole, diced onion, and sauteed jalapenos over your fish.
  • Plate, devour, and enjoy!
