We created this meal as a mix of Chicken Parm (without the breading) and Supreme Pizza. Depending on how you look at it, we made supreme pizza with chicken as the crust, or we made chicken parm with oodles of toppings! We landed on the latter, but it’s in the eye of the beholder.
We also opted to skip breading our chicken for simplicity and to reduce the amount of time needed to make this, but you can always bread your chicken as well before cooking if you’d like a little extra crunch to the dish! From there, we diced some Turkey Pepperoni and a slew of veggies to use as toppings, and we let our cast iron pan take it from there! In the end, this was a really fun dish and a winner with my family!

Time: 45 Minutes
Ingredients:
- Chicken Breast (one makes two servings)
- Garlic Powder
- Salt
- Onion
- Bell Pepper
- Black Olives
- Pepperoni
- Tomato Sauce
- Parmesan Cheese
- Shredded Mozzarella
Method:
- Preheat your oven to 350 degrees F.
- Slice your chicken breasts in half longways to make them thinner. Sprinkle a little salt and some garlic powder on them.
- Heat some oil in a cast iron (or other oven-safe pan), and then sear your chicken breast on both sides.
- As your chicken sears on its first side, use a different knife and cutting board to dice your onion, bell pepper, olives, and pepperoni.
- After flipping your chicken to sear the second side, plop and spread a scoop of tomato sauce atop each piece of chicken, and then arrange your toppings.
- Sprinkle on some parmesan cheese and mozzarella, and then transfer your pan to the oven.
- Bake until your chicken hits an internal cooked temperature of at least 165 degrees F.
- Plate, devour, and enjoy!
