Habanero Peach Velouté

My wife bought a peck of peaches from a local orchard the other day, so we had to find ways to use them! We’re using some of them to recreate some past favourites like Spicy Peach Pork BBQ, and we’re using others to form some new flavour combinations! For this one, we used our peaches to create a rich, thick, spicy/sweet sauce that we served with BBQ Dry Rubbed Shrimp and Green Beans with Sauteed Sweet Corn.

We think this velouté would also go well with pork tenderloin or grilled chicken!

Time: 20 Minutes

Ingredients:

  • 2Peaches
  • A splash or two of Water
  • 1 Tablespoon Flour
  • 1 Tablespoon Butter
  • Habanero (or Cayenne) Powder

Method:

  • Cut your peaches to remove the pits. Then, dice the peaches.
  • Add your diced peaches and a little water to your blender, and puree.
  • Melt your butter in a pan. When your butter is melted, add your flour, and whisk to combine to make your Roux.
  • When your butter/flour combo starts to bubble, add your peach puree, and sprinkle in your habanero powder.
  • Simmer to thicken.
  • Plate, devour, and enjoy!
