Beef and Broccoli Stir Fry with Kimchi

As we were driving to my Mother-in-Law’s house the other day, we passed a small family beef farm. Always looking for high quality food and to support local, we stopped and purchased a London Broil. The next step was to figure out what to make with it…and that decision quickly manifested when I found some kimchi. Kimchi is a Korean pickled cabbage product that is often (and gloriously) spicy.

Kimchi and beef decided, we figured we’d make a stir fry with broccoli to add some colour to the dish. So, we broke out my mom’s trusty wok and got to work! After cooking everything, we served over a bed of rice and topped it with a combination of roasted and black sesame seeds!

Time: 30 Minutes

Ingredients:

  • Kimchi
  • Broccoli
  • London Broil
  • Soy Sauce
  • Optional additional sauce: Gochujang or Hoisin
  • Sesame Seeds
  • 1-2 Tablespoons of Corn Starch
  • Warm Water (equal to the number of tablespoons of corn starch)
  • Sesame Seeds

Method:

  • Cut your broccoli into florets, and steam for 3.5-4 minutes in the microwave to soften.
  • As your broccoli steams, slice your beef very thinly against the grain.
  • Heat some oil in your wok, and then add your kimchi. Let cook briefly, and then add your beef. Once it starts to brown, add in your soy sauce and any other optional sauce you plan to use.
  • Add your steamed broccoli to the wok as well, and stir everything together.
  • When your beef is cooked through, combine your corn starch and water, and fully dissolve. Then, pour into your wok, and stir it in to thicken your sauce.
  • Plate, sprinkle your sesame seeds atop, devour, and enjoy!
