Chicken and Waffles Poutine

A little bit of Southern US and Canadian Fusion! We had some Waffle Fries in the freezer and hadn’t had Poutine in a while, so we figured it was time. Given that we had Waffle Fries though, we thought we’d make a little play on Chicken and Waffles (which typically uses actual waffles, and not waffle fries). Knowing we wanted to have our chicken in a gravy (gravy being a key Poutine ingredient, and all), we decided to use ground chicken.

From there, we added in some sliced collard greens (okra wasn’t available when we shopped, but that was our original idea) and made our gravy…with a little honey and cayenne for a sweet heat. Lastly, we served that over our waffle fries and cheese curds!

Time: 30 Minutes

Ingredients:

  • Frozen Waffle Fries
  • Ground Chicken
  • Onion
  • Garlic
  • Collard Greens or Okra
  • Honey
  • Cayenne Powder
  • 2 Cups of Chicken Stock
  • 2 Tablespoons Butter
  • 3 Tablespoons All Purpose Flour
  • Cheddar Cheese Curds

Method:

  • Preheat your oven (or air fryer) per the package instructions on your waffle fries, and lay your waffle fries on a baking pan/fryer basket. Then, begin to cook those.
  • Peel and dice your onion and garlic.
  • Melt your butter in a large pan, and add your onion and garlic. Cook until your onion starts to turn opaque.
  • As your onion and garlic cook, slice your okra or collard greens.
  • When your onion and garlic are ready add your ground chicken and green veggies to the pan. Sauté to completely cook your chicken. Make sure any excess liquids released by your chicken or veggies cooks off.
  • Once all of your excess liquid is gone from your pan, sprinkle in your flour, and stir to combine.
  • Let sit for a minute or two. Then pour in your chicken stock, and simmer to thicken.
  • Once your sauce starts to thicken, add in a honey drizzle and your cayenne, and stir to fully incorporate.
  • When your waffle fries are done, arrange them in a large bowl, and top them with your cheese curds. Then, scoop your chicken and gravy mixture atop, and allow that to heat your cheese curds.
  • Devour, and enjoy!
