We were looking for a great Football Food idea to make when my wife’s aunt was over to watch a Bills game a few weeks ago, and this is what we came up with! We love Stuffed Peppers, so the idea of stuffing a Buffalo Chicken filling into a bell pepper was just too intriguing to pass up. So, we went to the store and picked a pack of peppers. Originally, we thought about using green peppers because they’re always cheaper…but we decided to splurge on orange peppers because we thought their colour would go nicely with the orange of the Buffalo sauce (and we thought the flavour would enance rather than vie for supremacy like a green pepper might have). We then added some white rice as a carbohydrate filler, and we were off to the races like Josh Allen on a QB keeper.
We served our peppers alongside a copious heap of sauteed spinach. As a fun side note, we served these on a Sunday. The ensuing Monday, we went to my wife’s grandparents’ house for dinner, and when she lifted the lid off the pot, she revealed that we were going to have stuffed peppers (albeit a very different preparation) again…two nights in a row (win!).

Time: 1 Hour
Ingredients:
- Bell Peppers. We chose orange because we thought it would go well with the Buffalo Sauce colour.
- Ground Chicken
- Celery
- Onion
- White Rice
- Buffalo Sauce
- Crumbled Blue Cheese
- Blue Cheese Dressing
Method:
- Start to make your rice.
- As your rice cooks, dice your onion and celery. Heat some butter in a pan, and saute your onion and celery until they turn opaque.
- Add your ground chicken to the pan, and break it up. Cook fully.
- As your chicken, onion, and celery cook, preheat your oven to 350 degrees F.
- Slice the tops off your peppers, and arrange in a baking pan.
- When your chicken, celery, onions, and rice finish, mix in a large bowl with your crumbled blue cheese and Buffalo sauce.
- Stuff your chicken and rice mixture into your peppers.
- Bake for 40-45 minutes.
- Remove your stuffed peppers form the oven, carefully slice in half, and plate.
- Drizzle some blue cheese dressing over your peppers.
- Devour, and enjoy!
