Gotta love apple season! In this case, we decided to make a quasi-savory, quasi-sweet dish with the season’s bounty! So, we bought a big bag of apples and pulled one aside for this dish! We then sauteed our apple with seasonings before pureeing it and whipping it with our ricotta.
While it was pretty tasty, this dish was a little miscast in a way. It had a bit of a dinner quality to it with the whipped ricotta…but it also had a dessertiness to it. Of course, this leads us to believe that with a little sugar or honey added in, this could be a dessert (with different dipping ingredients). Alternatively, you could add some savory flare like thyme, ground rosemary, or even cayenne to the party to push it a little more to the dinner side of things.

Ingredients:
- Apple. Macintosh is probably the best for this, but Fuji works well too.
- 15-16 oz Ricotta Cheese
- Cinnamon
- Nutmeg
- Butter
- A Tablespoon of Milk
- A Pinch of Kosher Salt
- Dipping ingredients. We toasted some soft Italian bread on our griddle.
Method:
- Peel and core your apple. Then, slice it into wedges, and slice each wedge into thin pieces.
- Melt a little butter in a pan, and add your apples. Then, sprinkle in your cinnamon and nutmeg. Cook until your apples soften and start to lose shape. Add a little water as needed to encourage the cooking.
- Start to toast your bread. We like to spread a little melted butter atop each slice, and cook on the griddle.
- When your apple pieces are ready, puree them with a little milk in a blender.
- Scoop your ricotta into your stand mixer, and then add your pureed apple. Sprinkle in your kosher salt.
- Use your whisk attachment to whip your ingredients together.
- Plate, devour, and enjoy!
