Bar-Beet-Que Ribs

I may have said this once or twice before, but we love Beets in this house! As such, we are always looking for fun new ways to incorporate them into our diet, and we are particularly proud of this one. It combines the Slow Cooker Ribs method we have come to love with the earthy flavour of beets and a little hint of heat…and the result was succulent. Not only did we enjoy the meal, but we had extra sauce leftover for future use, and I got to make a shameless pun in the title! Triple win!

We served our ribs with Goat Gouda Grits since goat cheese and beets are such a perfect pairing. Then, for our side, we sautéed some onions, zucchini, and mushrooms for a simple medley!

Time: 5.5 Hours

Ingredients:

  • For your Ribs:
    • Baby Back or St Louis Ribs Rack
    • Salt
    • Onion Powder
    • Dried Tarragon
    • Black Pepper
  • For your Sauce:
    • 1 Pint of Canned Tomatoes
    • 2 Medium Beets
    • Brown Sugar
    • Red Pepper Flakes
    • Dried Tarragon
    • Onion Powder

Method:

  • Start your Ribs:
    • Begin by flipping your ribs on a large cutting board so the flesh side is facing down. Then, peel off the thin membrane that connects the ribs. This takes a little finagling, so be patient. It gets easier the more you do it.
    • Flip your ribs, and sprinkle on your seasonings. Then, place them in your slow cooker. Set the temperature to low, and let them cook for 5-6 hours.
  • Make your Bar-Beet-Que Sauce:
    • Peel your beets, and cut them into cubes. Then, boil the cubes until they soften enough to be easily pierced by a fork.
    • As your beets cook, add your tomatoes and other seasonings to a pot. When your beets are ready, drain the water, and add the beets to the pot as well.
    • Cover, and bring your sauce ingredients to a simmer, and let the flavours blend for about a half hour.
    • Use a blender or immersion blender to puree your sauce ingredients, and add them back to the pot.
    • Bring back to a simmer, and add any other flavours you see fit as you taste, and your sauce rounds into form.
    • When your sauce is to your liking, remove from the heat, and wait.
  • When your ribs are nearly at the end of your cook time, preheat your oven to 350 degrees F, and line a baking sheet with foil.
  • Remove your ribs from the slow cooker, and place them on the foil.
  • Brush your Bar-Beet-Que Sauce on your ribs, and place them in the oven for 10-15 minutes.
  • Plate, devour, and enjoy!
