Onion Marmalade Chicken Breast

We brought a jar of Onion Marmalade home with us from our trip to Ireland last year, and we decided to use it to make a funky baked chicken when my mother in law came to visit! So, we sliced some chicken breast in half to create a nice thin piece of chicken with a good flat surface…and then we topped that with our onion marmalade and finished it with shredded cheddar! The onion marmalade added a little sweetness (along with a hint of Worcestershire), and the cheddar added some creaminess and saltiness to the party to create a solid chicken entree that was super easy to make!

We served our chicken atop a bed of seasoned long grain wild rice and paired it with Roasted Brussels Sprouts! However, it would also go well with Wedge Fries (with just sea salt instead of the spice blend) and/or steamed vegetables!

Time: 35 Minutes

Ingredients:

  • Chicken Breast
  • Sea Salt
  • Onion Marmalade
  • Shredded Cheddar Cheese

Method:

  • Preheat your oven to 350 degrees F, and line a baking sheet with foil.
  • As your oven heats, slice your chicken breasts in half longways to make your chicken flat and thin.
  • Arrange your sliced chicken on your baking sheet.
  • Spread your onion marmalade evenly atop each piece of chicken. We like to scoop a spoonful on each before spreading to avoid the possibility of cross-contamination.
  • Bake for around 20 minutes.
  • Check the internal temperature, and if it’s around 155 or higher, add your shredded cheese, and bake to melt. Continue cooking until your chicken reaches a minimum internal cooked temperature of 165 degrees F.
  • Plate, devour, and enjoy!
