We made this the other day for dinner the day of a Buffalo Bills game, and it worked out surprisingly well…so we figured we’d share before the NFL Playoffs begin this weekend! I can’t say we were 100% confident that imparting Buffalo/Blue Cheese flavour into a Spaghetti dish would work…although we did have success working it into Buffalo Chicken Risotto. In the end though, I’m happy to report that the experiment was indeed a success.
We started by making a Blue Cheese Sauce in which we tossed our spaghetti before topping it with a Buffalo Chicken meat sauce. For the veggies, we used an onion and three zucchinis, but we think there’s plenty of room to experiment here as well. Mushrooms, peas,and/or celery would probably work well too.

Time: 45 Minutes
Ingredients:
- For your Meat Sauce:
- Ground Chicken
- Zucchini (we used 3)
- Onion
- Buffalo Sauce
- For your Pasta
- Spaghetti
- 2 Tablespoons Butter
- 2 Tablespoons Flour
- 2 Cups Milk
- Crumbled Blue Cheese
Method:
- Bring a large pot of water (with a teaspoon of olive oil and a pinch of salt) to a boil.
- As your water heats, peel your onion, and dice your onion and zucchini.
- Heat some butter or oil in a large pan, and sauté your veggies until your onion turns opaque, and your zucchini begins to soften.
- Add your ground chicken to your veggie pan, and allow it to cook. Use a spatula to break up the meat into small bits.
- When your water comes to a boil, add your pasta, and cook until soft. Then, drain the water, and leave your spaghetti in the colander.
- Make your Roux by melting two tablespoons of butter in the pot you used to boil your spaghetti, and then whisk in two tablespoons of flower. Let sit for a few minutes, and then add your milk, and bring to a low simmer.
- Add your crumbled blue cheese, and let your sauce thicken.
- Once your sauce has thickened a bit, add your spaghetti back in, and stir to combine and coat.
- When your chicken and veggies are cooked, pour in your Buffalo sauce, and stir to combine and coat.
- Arrange your spaghetti on your plate, and then top it with your meat sauce. Finish with a little crumbled blue cheese atop everything.
- Devour, and enjoy!
