We love making Funky Meatballs. They are so versatile, and you can typically build a meal out of them. And any leftover meatballs make for a great snack later! Well, for these meatballs, we started with ground beef, and then we infused them with horseradish! As they cooked, the horseradish mellowed a little, which gave the end product a really robust, but not too “in your face” flavour. From there, we made a little gravy with some caraway seeds to complement the meatballs, and we were well on our way to a solid meal!
We served our meatballs over a sauteed medley of shredded red cabbage, riced cauliflower, green bell pepper, and onion. However, these would also go well with any one of our Sneaky Mashed Potatoes Recipes or couscous!

Time: 45 Minutes
Ingredients:
- For your Meatballs:
- 16 oz Ground Beef
- Horseradish
- Mayonnaise
- Egg
- Bread Crumbs
- For your Gravy:
- 2 Tablespoons Butter
- 2 Tablespoons All Purpose Flour
- Caraway Seeds (to taste)
- 2 Cups of Beef or Veggie Stock
Method:
- Preheat your oven to 350 degrees F.
- Combine all of your meatball ingredients into a mixing bowl, and mash together by hand to fully incorporate.
- Form your meatballs and arrange on a baking sheet.
- Bake the meatballs for 8-12 minutes (depending on their size), then rotate, and continue baking until they reach a minimum internal cooked temperature of 165 degrees F. Then, remove from the oven, and set aside.
- Melt your butter in a large pan, and then add your caraway seed.
- Sprinkle in your flour, and whisk with your butter to combine.
- Pour in your stock, and whisk with your flour and butter to fully incorporate. Simmer, and allow to thicken.
- As your gravy nears your desired level of thickness, add your meatballs to the gravy to coat and reheat.
- Plate, devour, and enjoy!
