While it tends to look unappetizing at times, we absolutely love Saag Paneer. We typically use a variety of greens to make our versions, e.g. mustard greens, kale, spinach, etc. For this one, we decided to go a little wild (ha…foraging pun) and use Ramps exclusively! So, we started by cooking all of our sauce veggies together with spices before pureeing them in a blender. The ramps gave our sauce a little bit of a sweetness and garlickiness, which made gave a really fun added dimension to our overall dish! We then combined that withour paneer, and we were good to go.
We served our Saag Paneer over a bed of cumin seed infused basmati rice. If you’re looking for some additional sides, we suggest trying Spinach and Garlic Naan or Baked Vegetable Samosas!

Time: 35 Minutes (plus time to soak your cashews)
Ingredients:
- A copious bunch of Ramps
- 3-4 Roma Tomatoes
- 1/2 Onion (we suggest red onion)
- Garam Masala
- A handful of raw cashews, soaked in warm water for a few hours
- Ghee, Butter, or Coconut Oil
- Paneer (We used a Turmeric Infused one, which was awesome. If using plain paneer, we suggest adding a little turmeric to your spice blend for earthy sweetness)
Method:
- Soak a small handful of cashews in warm water.
- Peel and dice your onion and garlic.
- Melt some ghee, butter, or coconut oil in a pan, and then add your onion and garlic.
- As your onion and garlic cook, dice your tomatoes, and then add them to the pan. Sprinkle in your garam masala.
- Sauté until your tomatoes begin to lose their form.
- As your tomatoes cook, dice your ramps into strips.
- Add your ramps and cashews to your pan, and stir to combine. Allow your ramps to wilt.
- Scoop your entire veggie mixture to your blender, and puree.
- Cut your paneer into cubes.
- Heat a little more ghee, butter, or coconut oil in a pan, and add your paneer. Heat briefly, and then pour your sauce atop, and stir to combine.
- Bring to a low simmer.
- Plate, devour, and enjoy!
