Fried Chicken (of the Woods) Sandwich

We found a really nice Chicken of the Woods mushroom on our hike the other day, and we decided to try breading and frying it to form a sort of “chicken patty” for a sandwich! So, we broke out the flour, eggs, and panko bread crumbs, coated our mushroom, and fried it in our trusty Cast Iron Pan! We then topped it with baby arugula, red onion, tomato, and a sauce we made by combining horseradish with BBQ sauce! The end result was a really fun “Chicken” sandwich with (nearly) all the flavours and textures of the real thing!

We served our sandwich with Roasted Yellow Bean “French Fries”, but we think it would also pair really well with Sweet Potato Wedge Fries, Easy Coleslaw, or Broccoli Slaw Salad.
