This is a dish we’ve wanted to make for a little while, and we finally got around to turning the idea into reality! In sum, we combined the concept of Lasagna with Buffalo Chicken. We used fresh homemade pasta noodles, so we made our chicken mixture extra saucy so the noodles would soak some of that up as they cooked. From there, the noodles gave the dish a little body and structure, and the chicken mixture came out creamy with the classic Buffalo Sauce/Blue Cheese combination…and we finished the casserole with a little more of the sauce and some crumbled blue cheese. That made the finished product pretty…and oh, did it ever taste good!
If you’re looking for a fun take on a classic Italian dish or a different way to incorporate Buffalo Chicken into your game-day spread, give this one a try!

Time: 70 Minutes (more if making your Pasta from Scratch)
Ingredients:
- Lasagna Noodles. You can use store bought, or Make Your Own
- 1 pound Ground Chicken
- Celery
- Red Onion
- Buffalo Sauce
- Ricotta Cheese
- Crumbled Blue Cheese
Method:
- Pasta:
- If making your own lasagna noodles, prep your pasta dough ahead of time. One quick note…we used 1.5 cups of semolina, 3 eggs, and 1/2 tablespoon of salt, and that was perfect for an 11×7 lasagna pan.
- If using store bought, begin to heat a pot of water along with some olive oil and salt to bring to a boil. When boiling, cook your noodles until soft, and drain the water.
- Preheat your oven to 350 degrees F.
- Dice your celery and onion. Heat some olive oil in a pan, and add your celery and onion.
- When your celery and onion soften a bit, and your onion turns slightly opaque, add your chicken. Break it up with a spatula, and sautee with your veggies until everything is fully cooked.
- Pour in a little Buffalo sauce, and melt your ricotta to form a sauce for your chicken. Then, melt some (but not all) of your crumbled blue cheese into everything, stirring to fully incorporate.
- Give your lasagna pan a quick olive oil spray to prevent sticking.
- Arrange your pasta (cooked noodles our fresh rolled dough cut to the right size) in a bottom layer of your pan.
- Scoop a little less than half of your Buffalo chicken mix onto your bottom layer of pasta.
- Add a second layer of pasta, and again, top it with more Buffalo chicken mix.
- Add your final layer of pasta, and finish by topping that with the last of your Buffalo chicken mix.
- Sprinkle more crumbled blue cheese atop everything.
- Stash in the oven, and bake for around 30-40 minutes.
- Plate, devour, and enjoy!
