We love cheese, but for some reason, we tend to gravitate towards some go-to favourites and wind up overlooking the Havarti section! It’s a big mistake on our part, as this Danish cheese is truly delightful. It’s creamy, it can come plain or infused with herbs, and it’s just delicious! Given its overall profile, we thought it would pair really well with fresh mint from our garden, so we brought some home.
Now on to your actual pizzas! We made a Blueberry mint sauce to add a little sweetness to the earthiness of the mint. Then, we made some of our pizzas vegetarian by just adding the shredded cheese…and we sauteed and crumbled some ground lamb atop others figuring it would pair really well as a protein with the sauce and cheese. Meat or no meat, these pizzas were fantastic!

Time: 45 Minutes
Ingredients:
- Blueberries
- Fresh Mint
- Optional: Ground Lamb
- Havarti Cheese
- Pizza Crust or Dough (store bought, or Make Your Own!)
Method:
- Preheat your oven to 425 degrees F.
- Melt a little butter in a frying pan.
- As it melts, rinse your blueberries, and remove your mint leaves from the stems.
- Add your blueberries and mint to the pan, and cook until the mint leaves wilt, and the blueberries lose their shape.
- Transfer your blueberry mint mixture to a blender, and puree.
- If using ground meat, cook it in your pan.
- As your meat cooks, grate your cheese.
- Arrange your pizza dough or crust on a pizza stone or baking pan. If using fresh pizza dough, we recommend rolling it on parchment paper and then transferring that to your cooking pan.
- Spread your sauce evenly atop your crust or dough.
- Arrange your meat evenly over your sauce.
- Sprinkle your cheese onto your pizza.
- Bake for 20-25 minutes until your crust reaches your desired level of crispness, and your cheese is melted and gooey.
- Plate, devour, and enjoy!
