Before I write about this meal, I want to start by saying that it tastes so much better than it looks! Unfortunately, it’s tough to make a spinach puree that looks appetizing…but don’t be scared off…this meal was delicious! Now, onto the writeup itself!
This idea came from our combined love of the Greek Spinach Pie, Spanakopita, and the Canadian French Fries and Gravy classic, Poutine! We had potatoes and spinach on hand, so we figured we’d just blend the two concepts! From there, we chose to use feta as our cheese curd because it’s the Greekiest (that should be a word) cheese know, and it doesn’t melt when heated, so it would hold up well in the dish. Then, we added (although you don’t have to) crumbled chicken feta sausage to enhance the dish with some protein. In the end, all the flavours and textures went really well together for a really funky dinner!

Time: 45 Minutes
Ingredients:
- 8 oz spinach
- Onion
- Feta Spinach Chicken Sausage
- Chunk Feta
- Dill
- Black Pepper
- French Fries. Either use Frozen or Make Your Own (but without the seasoning suggestion in that recipe)
- 1 Tablespoon Butter
- 1 Tablespoon All Purpose Flour
Method:
- Preheat your oven to 375 degrees F, and arrange your fries on a baking sheet. See the link in the ingredients list if you’re making your own fries for that method. Place in the oven, and bake.
- Dice your onion. Then, heat a little olive oil in a pan, and add your onion. Sautee for a few minutes until your onions turn opaque.
- Add your spinach to your onion pan along with your dill and black pepper. Cook until the liquid from your spinach evaporates.
- As your veggies cook, uncase your sausage, and sautee it in another pan. Break it up into small crumbles as it cooks.
- When your spinach is ready, transfer the spinach and onions to a blender, and puree.
- Melt your butter in a saucepan, and whisk in your flour. Allow to sit for a moment to make your Roux. Then, pour in your spinach puree, and whisk together. Simmer to thicken.
- As your sauce heats, and your potatoes and sausage finish cooking, cut your feta into cubes.
- When all ingredients are ready, arrange your fries on a plate or in a bowl. Then, add your cooked chicken sausage crumbles and chunks of feta. Finally, pour your spinach sauce over everything.
- Devour, and enjoy!
