Us again…with more Ramp Recipes! For this one, we built our ramps into one of our favourite side “need something quick” side dishes: Couscous! We started by sautéing our ramps before adding in some veggie stock and then our couscous…yep…that easy. In the end, we had a really fun flare to our couscous as a (flat) pedestal upon which to build the rest of our meal!
We served our couscous as a bed for Pan Roasted Black Bass and Roasted Asparagus. But, this would be great with any fish you like!

Time: 15 Minutes
Ingredients:
- Ramps
- Couscous
- Vegetable Stock (4x the volume of your couscous)
Method:
- Slice your ramps.
- Heat a little olive oil in a pot, and add your ramps. Cook until they wilt.
- Add your vegetable stock to the pot, and bring to a boil.
- Turn the temperature down, and add your couscous. Stir to combine, and allow it to absorb the stock.
- Plate, devour, and enjoy!
