Before we find ourselves in the clutches of Winter, we wanted to share one more Savory Pumpkin Recipe with you! For this one, we roasted our pumpkin, mashed it, and combined it with bacon, leeks, and gouda into a Stromboli. You may be thinking, “What has he done? That’s not the basis for a Stromboli! This particular one worked really well. The roasted mashed pumpkin added a bit of creaminess and moisture to the filling, while the caramelized leeks provided some sweetness, and the bacon and aged gouda added a salty dimension. Unfortunately, the sauce on this one was more of an afterthought, so we went with a simple marinara…but we also think a creamy sauce with sage, white pepper, or maple syrup could be fun too!

Time: 90 Minutes
Ingredients:
- Pizza Dough (store bought or Homemade)
- Fresh Pumpkin (although canned will work in a pinch)
- Bacon
- Leeks
- Aged Gouda
- Butter
- Dipping Sauce of your Choice
Method:
- Preheat your oven to 375 degrees F, and line a baking sheet with foil. Give the foil a quick oil spray.
- If using fresh, Break down you Pumpkin. Then, arrange it on your baking sheet, and spray with oil. Roast for 30-40 minutes until the pumpkin is soft enough to easily pierce with a fork. Once your pumpkin finishes roasting, remove from the oven, and mash into a paste with a fork. **Keep your oven on after removing the pumpkin**
- As your pumpkin roasts, dice the stem of your leek so it forms little ribbons. Set aside, and then slice your bacon.
- Melt a little butter in a pan, and add your bacon and leeks. Cook until the bacon browns, and the leeks soften.
- Use a box grater or the shredding plate of your food processor to shred your cheese.
- Roll your dough out onto some lightly floured parchment paper. We like to use a French Rolling Pin for this.
- Spread your mashed pumpkin atop your dough (leaving some space at the top of your dough uncovered for rolling later.
- Add your cooked bacon and leek medley atop your pumpkin. Then, sprinkle your cheese evenly across your other toppings.
- Roll your Stromboli up, and fold the dough on the sides underneath. Then, transfer the parchment to a large baking sheet.
- Melt some butter in your microwave, and brush it on your Stromboli.
- Cut vent holes into your Stromboli, and stash in the oven.
- Bake for 35-40 minutes.
- Slice, Plate, Devour, and Enjoy!
