We found our first Chicken of the Woods of the season on a short hike the other day!!! So, we brought some of it home and decided we wanted to make a dinner that would combine two concepts we’ve employed in the past: Chicken and Waffles and Maple/Buffalo sauce! So, we bought some spelt flour waffle mix, breaded and fried some of our mushrooms, coated them in sauce, and turned everything into an awesome sandwich!
We served our sandwiches with Yellow Bean French Fries, which gave us a delicious, lower calorie alternative to classic French fries!

Ingredients:
- Waffle Mix (and whichever other ingredients are needed per the packaging)
- Chicken of the Woods Mushrooms
- Egg
- All Purpose Flour
- Bread Crumbs
- Buffalo Sauce
- Maple Syrup
- Blue Cheese Dressing
- Greens of your Choice. We used carrot greens, but arugula or spinach would be great too.
Method:
- Heat your waffle iron.
- Combine all ingredients needed for your waffles, and then make your waffles.
- As your waffles cook, arrange some all purpose flour in one large bowl, beat an egg in a second, and pour some bread crumbs in a third.
- Rinse your mushrooms, and then (working one by one) coat each piece with flour, then egg, and then bread crumbs.
- Heat a little vegetable oil in a frying pan (we like our Cast Iron skillet for this), and then arrange your breaded mushrooms in the pan. Fry until the first side is golden brown, and then flip to cook the other side. Work in batches if your pan isn’t big enough.
- Chop and sautee your greens until they wilt.
- Combine your Buffalo sauce and maple syrup in a small bowl, and stir to fully incorporate.
- Cut each waffle in half (for sandwiches), and put your cooked mushrooms on the bottom half.
- Scoop your maple Buffalo sauce over your mushrooms. Then, drizzle a little blue cheese dressing on top of that.
- Arrange your sauteed greens, and place your top waffle half on your sandwiches.
- Plate, devour, and enjoy!
