Whipped Goat Cheese Beets

My dad gave us a huge number of pre-boiled beets in shrink wrap a little while back, and we decided to break out the last of our stash the other day. The next thing we had to consider was what to do with them. While we tout the endless possibilities of Beet Recipes, we were struggling to come up with a concept for our 37th beet meal. Luckily, we found our inspiration in an appetizer that my wife and I had at a local restaurant at the suggestion of a friend.

The appetizer at play, Whipped Ricotta, was one we would have never thought to pick without our friend highlighting it…we instead would have skipped right over it in favor of something more Brussels Sprout based. But, it was SO good! The ricotta was so light and fluffy, and we immediately knew we needed to play with the concept. Only a day or two later, Chef Mimi posted a picture of a whipped feta dish on their Instagram, and we started thinking of other cheeses that might whip well, and Chèvre was where our minds immediately went since Beets and Goat Cheese go so perfectly together.

Our idea formed, we got to work! We whipped our goat cheese with a little milk to make it creamy and fluffy before scooping it atop fried beet slices and finishing off with a honey drizzle. The end result was a really fun appetizer that my family eagerly devoured!
