Spicy Sausage and Peppers

After a trip to a local farm stand, my wife came home with a bounty of green peppers! When she came home, she said, “I’m not really a fan of green peppers, but they looked good and were cheap, so I got them.” Because she’s not a huge fan of these peppers, I decided to build them into a richer set of flavours rather than let them stand on their own as a primary ingredient. To make that happen, I added some spicy Italian sausage, garlic, and onion to the mix along with some herbs, and then let everything simmer for a while in marinara sauce. This allowed all of the flavours to come together and for the peppers to soften and mellow. In the end, she gave it the thumbs of to indicate that I can make this one again for her!

We served this over thin spaghetti, but it would shine through nicely over a toasted and buttered hoagie roll or garlic bread!

Time: 90 Minutes (you can also go with a longer time and use a crockpot to simmer)
