Cajun Pizza

We’ve had a pack of Andouille sausage from our Mutton seeking trip to Kinderhook Farm last summer, and it’s well past time to use it. I think it took us so long because the Chorizo and Bratwurst we also bought from them on our excursion were so good that we just couldn’t bring ourselves to part with the last of the sausage array.

We figured that if we’re going to experience the disappointment of seeing our sausage stock dwindle, we ought to make sure we make up for it with the eating enjoyment…and with this one we did! Since Andouille is used in a lot of classic Cajun recipes, we decided we wanted to honor that in our meal. However, since sausage is amazing on pizza, we also wanted to go in that direction. A little while later, we had a pizza with a cayenne and black pepper tomato sauce topped with Andouille, corn, green peppers, and sliced Gouda in the oven. When it came out, we knew we made the right choice.
